This is most often the first thing we hear each morning. Sophie calling from her crib, she wants out, and the first thing she wants is a cold kiki. A cold kiki, is a frozen pancake.
I found a recipe a few months back that sounded good – relatively healthy, oats, whole wheat flour, very little sugar, and I could add in pureed vegetables, so Sophie would eat them without even knowing it – sucka!
I always admired blogs where people would give step by step instructions about something they were making, either a recipe, a craft, a sewing project, and include pictures, so here goes my attempt.
Cinnamon Oat Pancakes
1 1/3 cup whole wheat flour
1 cup quick oats
1/2 tsp salt
1/4 cup organic sugar
1 tbsp baking powder
1 tsp cinnamon
~whisk the above ingredients in a big bowl~ add:
1 cup milk
1/2 cup butternut squash puree (or you could probably use carrot, or banana)
3 tbsp vegetable oil
Mix everything together, and drop by 1/4 cup into a skillet heated to medium low. These are thick, so they take a while, but they’re worth it.
I usually make a double batch every two weeks, put them in freezer bags, and just take them out one-by-one, each morning.
I made this batch last night, and knew that Sophie would be asking for one in the morning, so was able to snap this shot of her enjoying her breakfast.
She just eats them plain, no syrup, no butter, no plate, no cutlery… the convenience of a poptart, but healthy! We used to warm them up, until she couldn’t wait for one to defrost one morning, so we handed her a cold pancake, so she would see that she would have to wait, but no! A frozen pancake is so much better! Silly parents. I’ve had a few friends ask for the recipe, so here it is! Enjoy!
